Perfectly Potato Cheddar Quiche

Ingredients
1 cup dry Perfectly Potato Cheddar Soup Mix1 1/4 cups hot water3 slightly beaten eggsSalt and pepper to taste1 cup shredded Cheddar cheese3 - 4 strips cooked, crumbled bacon9-inch prepared pie crust
Directions
Whisk first 3 ingredients in medium bowl; season with salt and pepper. Let stand 5 minutes. Place cheese and bacon in pie crust. Pour egg mixture over bacon mixture. Bake at 400° for 45 minutes. Let stand 5 minutes before cutting.

Note: Quiche will puff up but will flatten out as it cooks.

Cut into 8 slices
