French Toast Souffle (Light)

Ingredients
10 cup (1-inch) cubed sturdy bread (such as Egg bread, Hallah or White, about 16 (1-ounce) slices) Cooking spray 1.5 cups egg substitute (or 6 eggs large eggs) 1 1/2 cups 1% reduced-fat milk or non-fat 2/3 cup fat free half-and-half 1/2 cup maple syrup Zest of one orange1 teaspoon vanilla extract 2 tablespoons powdered sugar 2 tbl maple syrup on each serving
Directions
Place bread cubes in a 13 x 9-inch baking dish coated well with cooking spray. Whip or beat egg substitue, milk, half-and-half, 1/2 cup maple syrup, orange zest, nutmeg, cinnamon and vanilla, and mix until smooth. Pour egg mixture over top of bread; cover and refrigerate overnight.

Preheat oven to 375°.

Remove bread mixture from refrigerator; let stand on counter while oven heats. Bake at 375° for 40 to 45 minutes or until set. Sprinkle the souffle with powdered sugar, and serve with 2 tlb maple syrup.
