Win's Wheat and Dairy Free Cornbread

Ingredients
Mix 1 cup yellow cornmeal, 1 cup Arrowhead Mills Organic oat flour, 4 teaspoons of baking powder, and 1/2 tsp salt together in a large bowl using wooden mixing spoon. Add 1 cup soy milk, 1 egg, 1/4 cup canola oil and 4 tbsp molasses. Mix until all ingredients well blended. Pour into lightly oiled or sprayed baking loaf pan. Non stick pans work well.
Directions
Bake in oven at 425 degrees for about 25 minutes or until toothpick stuck in middle comes out clean.

    subbed heaping cup rolled oats for oat flour. used muffin tins, about 2/3 full, made 15. baked ~12 mins. good! not too sweet...did not rise much, next time will fill more, and make less. each piece had nice crust, held together well. - 1/11/11
