8 8-10 inch flour tortillas1 1/2 cups shredded cooked chicken, beef, or pork1 cup bottled salsa1 3 1/8-oz can jalapeno flavored bean dip1 tsp fajita seasoning8 oz Montery Jack Cheese or cheddar cheese, cut into eight 5x1/2-inch sticksShredded lettuce (optional)Dairy sour cream (optional)Bottled salsa (optional)
1. Wrap tortillas in foil; heat in 350 degree oven for 10 minutes or until heated through.
2. Meanwhile, in a large bowl combine chicken, 1 cup salsa, bean dip, and fajita seasoning.
3. To assemble, spoon 1/3 cup meat mixture onto each tortilla near one edge. Top meat mixture with a stick of cheese (I used shredded cheese). Fold in sides and roll up, starting from edge with the filling. Place filled tortillas, seam sides down, in a greased 3-quart rectangular baking dish (I used a 13x9 glass pan).
4. Bake, uncovered, in a 350 degree oven for 20-30 minutes or until heated through. If desired, serve with lettuce, sour cream, and additional salsa.
