Mexican Black Beans and Rice

1 medium onion, coarsely diced1/2 large red pepper, coarsely diced2 teaspoons of olive oil1 can of diced tomatoes (can use the flavored ones with green peppers and onions if you wish). Do not drain1 can of black beans, drained and rinsed1 cup of frozen corn kernels1 cup of brown rice2 cups of chicken brothcuminchili powdercayenne pepper**seasoning is to taste
Heat a medium sized sauce pan, and add olive oil. Saute onions and peppers until tender-crisp. Add rinsed beans, canned tomatoes, brown rice, chicken broth, corn and seasonings. Bring to a boil. Cover and turn to low and cook until the rice is cooked and the liquid is absorbed, approximately 20 minutes.
