Low Carb Baked Potato Skins

Ingredients
Skin of baked potato (since I am counting carbs, I was careful to weigh it, this recipe counts on 20 grams of skin only. Do whatever you want, but if you are counting, be aware of how much you use.Olive oil or melted butter- 1 tspShredded cheese about an ouncesteak, chopped around 4 ouncesSalt
Directions
Scoop out all the potato from the skin and lay out the skin on a plate. (I use the meat for a baked potato soup for the rest of the gang) sprinkle some oil or butter on, with a bit of salt. Add the rest of your toppings and cook in the toaster oven (or, oh, 350*? 400*? in the oven) for 10 minutes until melted and the edges are crispy.
