Cajun Chicken with Pineapple Salsa

4 boneless chicken breasts, no skin4 tsp sunflower oil2 tsp lemon juice1 tbs Cajun spicesSalsa:6oz fresh pineapple, chopped1oz onion, chopped1oz red pepper, chopped1/4 in piece of root ginger, chopped1tbs cider or wine vinegar1tbs soft brown sugar4tbs barbecue sauce
Mix all the salsa ingredients together and warm in a saucepan.
Pre-heat the grill or BBQ to medium-hot setting. Rub 2 teaspoons of oil into the chicken and add the spices. Rub in well. Mix remaining oil with lemon juice and keep for basting.
Grill chicken for 4-5 minutes, brushing with oil/lemon mixture. Turn over and repeat.
Turn over once more and brush with remaining baste. Turn heat up and grill for a few minutes until crisp and dark in colour. Serve with a little of the warm salsa, baked potato and salad.
