Hawg's Slow Cooker Goulash

Ingredients
1 tbsp olive oil1 lb stew beef, cut into bite size cubes1 onion, shopped2 tsp minced or pureed garlic1/2 lb sliced mushrooms1 tbsp whole wheat flour1/2 can (398ml/14 oz) of diced tomatoes (no salt added)1/2 cup low sodium chicken broth1 cup sliced red pepperBlack Pepper (lots!)
Directions
Heat olive oil in a pan. Brown beef. Transfer to slow cooker. Add onion and garlic to pan. Cook until tender. Add mushrooms and cook until slightly tender. Add flour, toss to coat and cook for one minute. Transfer to slow cooker. Add remaining ingredients to slow cooker.
Cook on LOW for 8 hours, or High for 4 hours. Serve on top of noodles, rice or potatoes and top with a dollop of sour cream (optional)

    It was good, just a little bland. I didn't use a lot of pepper since that' my preference. I don't think the flour did the trick to thicken up the gravy, but I enjoyed this over no-yolk noodles! I like things that cook themselves in the crockpot! - 12/12/09
