Low Cholesterol Scalloped Potatoes

4 cups thinly sliced raw potatoes1 onion1 tablespoon chopped parsley (optional)3 tablespoons whole grain flour1/8 teaspoon pepper1 1/2 teaspoons salt3 tablespoons low cholesterol margarine1 1/2 cups skim milk
1. Layer potatoes and onions in casserole, sprinkling flour between each layer.
2. Heat milk and margarine and season with salt, pepper, and parsley. Pour sauce over all layers.
3. Bake 1 hour covered at 350° F. Remove cover and bake additional 30 minutes.
Makes 6 servings.

I used less salt than called for. I added about a cup of part-skim mozzerella. I only used 1 Tablespoon of Margarine. It was wonderful! The child and hubby loved it. Next try, I'll use olive oil instead of marg and Mrs. Dash instead of salt and pepper. Family says I should make it tomorrow. Winner! - 9/26/08
