Sassy Meatloaf

Ingredients
1 lb Ground beef, lean1/2 c. Pace Chunky Salsa1/2 c. Italian Breadcrumbs1/4 c. Parmesan Cheese1 Egg3 garlic clovesdried parsley to taste ( 3 Tbsp)salt and pepper
Directions
Mix all ingredients together until well blended. Form into loaf in loaf pan. Cover with foil and bake for 40 min. at the last 5 minutes remove foil.

Other variations I have done:
Turkey and Pork instead of beef
A string cheese put in the middle - kids love this!
Shredded chedder cheese instead of parmesan - cheese melts into meat as it cooks
