Tomato Zucchini Soup

Ingredients
2 small zucchini sliced and then quartered2 cans Tomato Puree (28 oz each)1 big can kidney beans3 tbsp onion powder1/2 cup soy milk3 tbs cilantro
Directions
Cut zucchini. Place in frying pan with 1 tbsp oil. Saute for 10 minutes. Place in bottom of soup pot or in crock pot. Add both cans of tomoato puree, kidney beans, onion powder. If in soup pot, simmer for 20 minutes. If in crock pot, let cook all day. Add 1/2 cup soy milk and cilantro. Stir until well blended.
Makes 12 1 cup servings.
