Cream of Cauliflower soup

Med - large head of cauliflower500-900 mL of chicken stock1/4 cup chopped onion1/4 cup margarine1/4 cup flour2 cups fat free milk
Cook cauliflower in the chicken stock. Let cool and then blend (in batches) in the blender.
Melt margarine or butter and add onions. Saute onions until tender. Add milk and flour and heat on Med. heat until milk thickens.
Add thickened milk and onions to cauliflower and warm again.
