Broccoli,Cauliflower & Carrot Soup

Ingredients
6 C Chicken Broth (can use water + bouillon cubes or broth)Fresh Broccoli Fresh CauliflowerFresh Carrots1/2 C Whole Wheat Flour1 1/2 C milk (I used 1%)Cheese, if desired (I used mozzarella and velveeta)
Directions
Bring chicken broth to light boil. Add fresh vegetables and simmer for appx. 10 minutes. Stir flour into milk until smooth; add to soup stirring to thicken. Add cheese once desired thickness achieved.

    I made this for dinner tonight and it was wonderful. I added red peppers and sauteed onions. Also I only had sharp cheddar cheese on hand. It was really good. I saved some to take to work tommorrow. - 3/10/10
