German Apple cake Muffins

Ingredients
4 peeled and chopped apples, medium dice( I use 1/2 granny smith and 1/2 eating apples).2 large eggs1 egg white1 1/2 cups whole wheat white flour1/2 cup flax seed meal1 c. Ideal sweetner for baking1/2 tsp salt2 tsp cinamon2 tsp vanilla1 tsp baking soda3/4 cup unsweetened apple sauce1/4 cup cannola or other light oil
Directions
Mix the dry ingredients together, add the liquid ingredients, this will make a very dense batter, add the cubed apples. You can bake this in a 9x13 pan, baking spray added 1st. I prefer muffin cups as they are portion controlled and I can make them ahead and freeze them for snacks and breakfast, they are super warmed in the microwave. These are handy for the lunch box too. I put a heaping serving spoon per cup about 1/4 per muffin. Bake untill a toothpick comes out clean approx 25 to 30 min. 45 min for the 9x13 cake pan. lightly dust with powdered sugar and enjoy!
