Curried Rice

Ingredients
1 tbsp Vegetable oil1 tbsp garlic1 tbsp cumin1 tbsp chili powder1 cup low sodium chicken broth1 tbsp soy sauce1/2 cup water1 1/2 cups minute rice
Directions
Heat oil in a non stick skillet. Sweat garlic until it becomes aromatic. Stir in curry, cumin, and chili powder. Fry for about 10 seconds. Stir in broth, then add the soy sauce and the water. Bring to a boil, and stir in the rice. Cover and simmer for about 5 minutes on low. Makes 4- 3/4 cup servings.
