Ingredients
Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lbWinn Dixie Classic Style Fat Free Pasta Sauce. (1/2 Cup), 1 cupMozzarella Cheese, part skim milk, 8 ozHormel Turkey Pepperoni (17 is one serving), 1.2 servingMushrooms, fresh, 16 slice
Directions
Cut the Eggplant along its axis (the length) into four slices. Lay on cooking sheet. Now build it like a pizza.... pour sauce onto each piece and cover completely. Add 1/4 cup cheese to each, add 6 pepperonis, add 4 mushrooms add to oven and cook.

    Very delicious and even smells and tastes like real pizza!! I have to admit that if you're not a fan of eggplant than this is not your recipe, but if you like it YOU HAVE TO TRY THIS!! - 10/6/09

    WOW! This was so great! It tastes good, it's filling and not horrible for people on a diet! PERFECT MEAL!!! FYI, since the original recipe leaves things to interpretation ~ we baked it at 400 for about 8 mins, then broiled it on low for 4 mins to get the cheese that perfect shade of light brown. - 1/14/10
