Chicken Fajita Meat Filling

Ingredients
I Cup Onions, sliced2 lbs Chicken Breast, boneless, skinless4 Tbsp Olive Oil4 Cloves Garlic, crushed1 tsp Salt
Directions
1. Slice the Onions
2. Crush the Garlic Cloves
3. Mix together Sliced Onions, Crushed Garlic, Salt & Olive oil.
4. Slice the Chicken Breast into Narrow Strips.
5. Add Sliced Chicken to the above marinade mix.
6. Let marinate for about 15 minutes.

This mixture can be cooked the same evening, but I usually put it together on Sunday to use later in the week, when I know that I will be short on time.

My family likes Garlic, so I generally will use more than 4 cloves of Garlic. Since my husband has high blood pressure, I usually do not add the salt to the marinade mixture.

So adjust the seasoning to your own preferences.

Servings: 8 (4ozs chicken) and divide onions evenly among servings.
