Low fat Brocoli Soup

2 cloves garlic minced1 medium onion chopped1 medium potato- peeled and chopped2 bunches broccoli (about 4 cups including stock)1/2 tsp tyme4 cups low salt chicken stock4 tbs fat free evaporated milk4 oz light medium cheddar cheese(optional)
saute garlic and onion in large pot til translucent. Add chicken stock, tyme potato and stock of broccoli. Boil for about 7 minutes or until potato is cooked. add broccoli flowerettes and cook for an additional 3 minutes until flowerettes are bright green. remove pot from stove. Put soup in batches into blender and liquify. put lliqufied soup back in pot and add milk, stir and enjoy. Makes 5- 1 cup servings -- if adding cheese, add it at the end with the milk adding cheese gives the soup a rich flavor (calorie count is without cheese)
