Polenta Pancakes

Ingredients
1 C Whole Wheat Pastry Flour1 tsp Baking Powder1/4 tsp Salt1C Warm, precooked Polenta1 C Milk2 Eggs, Beaten1 TBS Butter, Melted1 TBS Honey
Directions
Mix all wet ingredients and dry ingredients seperately, then blend together. Batter may be a little lumpy. I mix mine all up in the Kitchen Aid mixer to get it as smooth as possible. Then I cook them in 1/3 cup increments on a cast iron griddle with coconut oil (not included in the calories of this recipe). These could easily be cooked on a non stick surface with a cooking spray as well for less oil. Cook on side one until it's a little bubbly on the edges then flip. Use your cooking savvy to figure out when they're done. I like mine a little browned and crispy on the edges. YUMMERS! Enjoy.
