Gluten Free Banana Chocolate Chip Muffins

Ingredients
Wet ingredients:Butter, unsalted, .25 cup, meltedGranulated Sugar, .5 cupEgg, fresh, 2 largeMilk, 2%, .25 cupBanana, fresh, 2 mediumDry ingredients:Bob's Red Mill White Rice Flour, 2 cupsBaking Soda, 3 tspSalt, 1 dashVanilla Extract, 1 tspHershey's Special Dark Chocolate Chips, 6 tbsp
Directions
Preheat oven to 350.

Beat wet ingredients with hand mixer until completely blended.

Mix dry ingredients in a large bowl, then add the wet ingredients. Mix until all flour is dissolved into mixture - don't mix beyond that. Add extract and chocolate chips, stir until just mixed.

Spoon batter into greased 10 muffin tins. Bake for 25-30 min, or until tops are slightly golden brown and firm/spongy when you tap the tops. Best served warmed up a bit.
