Lentil and Brown Rice Soup

1 1/3 cup lentils2/3 cup raw brown rice4 Tbsp olive oil4 cloves garlic, minced4 Tbsp soy sauce4 bay leaves1 large onion, finely chopped4 medium carrots, chopped2 medium potatoes, diced1 large celery stalk, chopped1/2 cup frozen corn1/2 cup red cooking wine2 tsp each dried basil and paprika1 tsp each dried oregano and dried thyme1 tsp salt1/2 tsp black pepper
Place the first 6 ingredients in a large soup pot and cover with about 10 cups of water. Bring to a boil and simmer, covered, over moderate heat for about 10 minutes.
Add all the remaining ingredients. Add more water until your soup pot is full, up to 2 more cups. Simmer for at least 45 minutes, but it is better if you simmer for several hours.
Makes 8 big servings.
