Roasted Veggies

Ingredients
1/4 c. Red Pepper, 1 c. Edamame, 1.5 c. Broccoli, 5 cloves garlic, 1 tbsp. olive oil, 1 c. zucchini, 1/4 c. onion, 1 med. sweet potato.
Directions
Slice up all veggies, toss into baking dish, sprinkle with kosher salt, toss in 1 tbsp olive oil. Bake at 375 for 35 minutes or desired tenderness. Makes 3 - 1.5 c. (or about) servings.
