Lentil Squash Soup with Turkey Sausage

Ingredients
3 tablespoons olive oil1 medium onion chopped3 cloves garlic cubed1.2 pounds Italian turkey sausage- sliced2 cups lentils20 ounces cubed butternut squash4 cups of water
Directions
Heat olive oil in dutch oven and add onions and garlic. Cook until caramelized. Add the sausage and brown for 5-10 minutes. Add the squash and lentils and the water, bring to a simmer and cook for 90 minutes stirring occasionally. Add salt and pepper to taste.
