Low Fat Pumpkin Muffins

4 eggs3 cups sugar1 cup applesauce2 cups canned pumpkin3.5 cups flour1 tsp salt1 tsp baking powder2 tsp baking soda1`/2 tsp cloves1 tsp cinnamon1 tsp nutmeg1 tsp allspice2 TBSP milled flaxseed2/3 cup water
Beat eggs, sugar and applesauce together until fluffy. Add 2 cups pumpkin to the egg mixture.
In separate bowl, stir together the flour, salt, baking powder, baking soda, cloves, cinnamon, nutmeg, and allspice, and milled flaxseed. Add your dry ingredients to your pumpkin mixture and stir. Then add 2/3 cup water and mix well. I use this recipe to make my children muffins. It makes approximately 36 muffins. Bake in 350 degree oven for 20 minutes.
