Easy Sesame Udon w/ Edamame & Furikake

1 package of Soba Noodles (300 g)1/4 c. soy sauce2 cloves garlic, minced2 tablespoons sesame oil2 tablespoons rice vinegar 1 tablespoon canola oil3 tablespoons granulated sugar1/2 teaspoon siracha hot chili sauce1 cup edamame (if using frozen, thaw first)1 tablespoon fuikake flavor of choice (optional)
1. Cook soba noodles according to package directions.
2. Put soy sauce, garlic, sesame oil, canola oil, rice vinegar, chili sauce, and sugar in a large bowl. Whisk to combine.
3. Place the cooked noodles in to the large bowl with the sauce. Using tongs, toss well to combine.
4. Add the thawed edamame. Toss to combine.
5. Separate out into 4 generous portions, or 8 small side dish portions. Sprinkle with furikake seasoning of choice or, if you don't have furikake, sprinkle with a bit of sesame seeds.
