Slow Cooker Sweet & Sour Chicken w/Brown Rice

Ingredients
1 lb Boneless Skinless Chicken Breast1 Medium onion, chopped1 Can (14 -1/2 oz.) Chicken Broth1 Bottle (10 oz.) Sweet N Sour Sauce1 Can (8 oz.) Pineapple chunks with juice1 Medium green pepper, chopped2 Cups brown rice
Directions
Place chicken in the slow cooker.
Top with onions, chicken broth, and sweet and sour sauce.
Cover with lid.
Cook on low for 5 to 7 hours (or on HIGH for 4 hours)
Add pineapple, green pepper ,mix well and recover.
Cook on low an additional 20 minutes.
Cook brown rice according to package directions.
Serve chicken over brown rice.

    You can cut down on the sodium by omitting the chicken broth and adding the same amount of water instead. Chicken broth is loaded with sodium! - 5/10/13

    I thought it was good (particularly since it prevented me from getting Chinese take-out). Next time I think I will add less chicken broth and a little bit of corn starch to try to thicken it up a bit. Would definitely make it again! - 9/9/10
