Healthy Banana Nut Muffins

Ingredients
3 cups spelt, kamut, or whole wheat flour2 cups plain yogurt2 eggs, lightly beaten1 tsp sea salt1/4 cup map;e syrup2 tsp baking soda1 tsp vanilla extract3 tbsp melted butter1 cup banana mashed1/2 cup chopped walnuts
Directions
Soak flour in yogurt for 12-24 hours (closer to 24 hours is better...will make the muffins rise better)
Blend in remaining ingredients
Bake at 325 for about an hour.

You can use just about any kind of fruit other than banana in these....blueberries (place on top of muffin instead of mixing in), dried cherries, raisins, etc.

Should make 15 muffins.
