Almond Chicken Salad

Ingredients
1/4 cup plain non-fat yogurt1/2 tsp curry powder1/2 tsp lemon juice1/8 tsp saltpepper to taste1 cup chopped roasting chicken breast1/4 cup chopped red bell pepper1 tbsp sliced almonds30 grams fresh spinach leaves
Directions
1. In a medium bowl, whisk together the yogurt, curry, lemon juice and salt.

2. Add chicken, bell pepper, cilantro and almonds and toss to coat

3. Serve on fresh spinach leaves.
