Basic Salmon Patties

Ingredients
2 14.5 oz cans Salmon2 tbsp Olive Oil3 Egg Whites30 Saltine Crackers1.25 tbsp Shortening
Directions
Combine salmon, olive oil, egg whites, and crushed saltine crackers; mash together until well-mixed. Fry in patties, using shortening in the pan (I used about 1/2 tbsp shortening for each batch of four patties). Makes about 10 patties. Serve with bread, either as sandwiches or a side dish.
