Spicy Pumpkin Tofu Soup

Ingredients
•1 tsp Red curry paste •14 oz can Pumpkin puree •2 cups Vegetable stock •14 oz can Coconut milk •12 oz can Silken tofu, firm cubed •1/4 cup Green onions, thinly sliced •1/2 cup Plain yogurt, full-fat (optional)
Directions
In a large soup pot, heat curry paste over medium heat until it starts to toast. Add pumpkin and stock and cook 5 minutes. Reduce heat to a simmer.

Add coconut milk and cubed tofu, stirring gently and cook until heated through. Serve with a dollop of yogurt and green onions sprinkled on top. Yields 4 - 6 servings
