20 Ripe Tomatoes6 Peaches6 Pears6 Cooking onions3 Red Peppers3 Green Peppers3 cups of Brown Sugar2 Tbsp of salt4 cups pickling spices6 Bay Leaves3 tsp curry powder
Wash fruit and veg, chop into small pieces and place into a large cooking pot. Dissolve sugar and salt in vinegar and pour over chopped fruit and veg. Place pickling spices and bay leaves into cheesecloth and tie off. Add to the pot of veg and fruit with the curry powder. Bring to a boil and then gently simmer for 2 hours. When done, remove spice bag, pour chile sauces into hot sterilized jars and seal. Makes 12 2 cup (500 ml) jars.
