Baked Cheese Polenta with Swiss Chard

Ingredients
1 3/4 cups water1/4 tsp salt1 (14 1/2-ounce) can vegetable broth1 cup yellow cornmeal1/2 cup (2 oz.) crumbled feta cheese3 Tbl. grated fresh Parmesan Cheese1/4 cup fat free cream cheese - add a few spoons of milk to make it creamy
Directions
1. Preheat oven to 400 degrees.
2. Prepare chard: remove stems and center ribs. Discard stems, chop ribs, and coarsely chop leaves. Heat a large nonstick skillet coated with cooking spray over medium heat. Add garlic, saute 30 seconds. Add ribs and 2 Tbl. water; cover and cook 5 minutes or until wilted.
3. Prepare polenta: place 1 3/4c. water, salt, and broth into a large saucepan. gradually add the conrmeal, stirring constantly with a whisk. bring to a boil. reduce heat to medium and cook 8 minutes. stirring constantly. Add cheeses, stirring conatantly with a whisk. Spoon half the polenta into a 2-quart baking dish coated with cooking spray; spreading evenly. Top with the chard mixture. Spoon cream cheese ofer chard, spreading evenly. Quickly add remaining polenta, spreading evenly.
4. Bake at 400 degrees for 20 minutes. Let stand 5 minutes.

    I love love love this recipe! I was looking around a while ago for recipes with swiss chard (I had an abundance and was getting sick of it!) and came across this.     I made this last night with onions, garlic, spinach, broccoli, and asparagus as my filling. I think next time, I will try to make this part of the dish more flavorful or experiment with other fillings. I loved the use of the polenta with the cheeses! - 5/28/09
