Fall Mini-Corn Muffins

Ingredients
1 cup ground popcorn (cornmeal)1/2 cup ground oats1/2 cup flour2 T sugar1 T baking powder1/2 tsp salt2 eggs1 cup skim milk2T pumpkin puree2T olive oil1 can drained corn
Directions
Grind popcorn, oats and puree cooked pumpkin
Mix first 6 ingredients
Mix next 4 ingredients separately and then add to first 6 with canned corn, beating until just smooth. Fill mini-muffin pan with 1 T batter per muffin for calories given. Bake in 425 F oven for about 10 min.
