Delicious Apple Fibre Muffins

Ingredients
1 1/4 cups unsweetened applesauce (I used home-made)2 tbsp fat free soy milk (I used So Good Trim)1/4 cup agave nectar (or honey for non-vegan)3/4 cup water1 tsp maple extract1 cup whole wheat flour1/2 cup white flour2 tbsp spelt (or oat) bran1/2 cup rolled oats (not instant)2 tbsp ground flaxseed2 tsp baking powder3/4 tsp baking soda1/2 tsp cinnamon1/4 tsp nutmeg
Directions
Preheat oven to 375F, grease 12 muffin cups (lining doesn't work, I find).
In a large bowl combine applesauce, soy milk, agave, water and maple extract.
In another bowl whisk together flours, bran, oats, flaxseed, baking powder, baking soda and spices.
Add to the wet mixture and stir just to combine.
Bake for 20 minutes, turn out immediately and cool on a wire rack.
