Lentils with Onion and Garlic

Ingredients

1 cup dried green lentils3 TBSP olive oil (we used safflower oil)1 medium onion1 whole dried hot red chile (we omitted)3 garlic cloves, peeled & chopped1 TSP salt (or to taste)Freshly ground black pepperLemon Wedges (optional)
Put oil in medium saute pan over medium-high heat.
Add onion when hot.
Stir & fry, turn down if needed, until onion is reddish brown and crisp. Remove w/ slotted spoon & spread out on a paper towel.
Put chile and garlic into remaining oil and stir for 10 seconds.
Put in lentils with 2 1/2 cups of water.
Bring to a boil.
Turn heat to low and partially cover.
Cook gently for 30-35 minutes or until the lentils are tender.
Add the salt and pepper and stir to mix.
Garnish with lemon wedges.
