1/4 cup chopped yellow onion1/4 cup chopped red bell pepper1/2 cup chopped baby spinach1- 10" Brown Rice tortilla (heated according to directions)1/2 TBSP Extra Virgin Olive Oil (for cooking)Pace Picante Sauce (for dipping)
In a pan on medium high heat, add olive oil, onion, red pepper. Saute for 3 minutes. Spoon into flat tortilla. Add spinach on top of veggies. Roll up and enjoy! Dip in Pace Picante sauce for an extra kick!
