Gluten-Free Biscuits

Ingredients
4 cups Pamela's Baking and Pancake Mix1 tbsp minimally processed sugar2 cups light cream
Directions
Makes 18 2 1/2" biscuits
Preheat oven to 450 degrees
Put Pamela's Baking Mix in medium bowl
Add 2 cups light cream and mix with a wooden spoon, adding more baking mix if necessary to make a thick, floury dough
Mix until just blended
Spoon dough onto floured counter and shape with hands into a 3/4"-1" thick circle
Cut with 2 1/2" biscuit cutter and place on baking sheet, spacing biscuits 2" apart
Bake for 15-20 minutes until golden brown on top
You may freeze for future use:
Place unbaked biscuits 1/2" apart on a cookie sheet and cover well with plastic wrap.
Put in freezer and freeze for several hours until completely frozen
Remove to ziplock bag and store in freezer until ready to use
Preheat oven to 450 degrees and bake for 20-25 minutes
