Lickety Split- tomato rice soup

Ingredients
1 large onion diced small4 tablespoons olive or canola oil2 tablespoons flour- can use whole wheat1/2 tsp. sugar1 large can of tomato juice1/2 cup rice2 cups watersalt, pepper and basil and/or oregano to taste
Directions
In a pot, saute the onion in the oil until they are transparent. Add the flour and stir well. Add the rest of the ingredients and bring to a boil. Turn down heat and allow to simmer for 20 minutes, stir occasionally so rice and onions don't stick to the bottom of the pot.

Makes 8 1-cup servings.
