Ingredients
3 lb. pork tenderloin roast1/2 tsp. salt1/4 tsp. pepper1 c. unsweetened applesauce3 Tbsp. Dijon mustard1 Tbsp. honey3 fresh rosemary sprigs
Directions
Sprinkle roast with salt and pepper (or any other seasonings you prefer). Brown the roast on all sides in a nonstick skillet. Place on a rack in a shallow roasting pan. Combine applesauce, mustard and honey. Spread over roast. Top with rosemary. (I usually put the dried crushed rosemary on the roast with the salt and pepper). Bake, uncovered at 350 for 1 3/4 -2 1/2 hours or until a meat thermometer reads 160. Let stand 10 min. before slicing
OR
put in crockpot, rather than roasting pan, on low for approx. 6 hours.--We usually do the crockpot version.

Makes 12-3 oz. servings or 9-4 oz. servings. Calories are done for the 3 oz. serving size.

Delicious! Cooked it in the oven, came out really moist and juicy. I'll try the crockpot version next time. - 9/28/10

Wow, this was awesome! We put the pork loin on the barbeque (coated with the rosemary, salt and pepper), seared it, then turned down the heat and basted it with the applesauce sauce. YUM!! Next time we'll try it in the crock pot! Thank you for sharing the recipe. - 4/21/10
