Chicken Tofu soup

Ingredients
1 cup Quinoa (dry measure)8 cups fit & active chicken broth (Aldi's)1 8oz can sliced muchrooms (drained)1 10oz box birdseye chopped frozen spinach1 brick extra firm tofu (349gms),dicedRomano Cheese (optional)
Directions
cook Quinoa according to package instructions, set aside. In a 6qt stock pot combine chicken broth, spinach, mushrooms and tofu, bring to a boil. Reduce heat to low and cook until spinach is completely thawed, add Quinoa stir and serve. For added flavor, sprinkle a little romano cheese over the top
