Snobby Joes (adapted)

Ingredients
1 cup uncooked lentils, (brown)4 cups water1 T olive oil1 green pepper, diced small2 cloves garlic, minced1 T chili powder2 tsp. dried oregano1 tsp salt8 oz can tomato sauce1/4 cup tomato paste2 T brown sugar2 T apple cider vinegar
Directions
Bring 4 cups of water to a boil. Add lentils, cover, and bring back to a boil. Reduce heat and simmer about 20 minutes, until lentils are soft. Drain and set aside.

About 10 minutes before lentils are done, preheat olive oil in a soup pot over medium heat. Sauté the onion and green pepper for about 7 minutes, until softened. Add garlic and sauté another minute.

Add the cooked lentils, chili powder, oregano, brown sugar, and salt. Stir. Add the tomato sauce and tomato paste. Cook for about 10 minutes.

Turn off heat and let sit about 10 minutes so the flavors can meld. Serve over a whole grain bun.
