Roz's Easy African Peanut Soup

Ingredients
1 package dry onion soup ( + 3 cups water)1 can chick peas1-2 inches of fresh ginger root4 tbsp. chunky peanut butterCurry powder, cumin, cayenne pepper (or) Pataks hot curry paste ( to taste).1 can diced tomatoes
Directions
Drain then rinse chick peas. Blend all ingredients ( except diced tomatoes) until creamy.( 1-2 tbsp. of Pataks hot curry paste can be used in lieu of spices).
Transfer to a pot on the stove and add the diced tomatoes. Cook until very hot.
Serve with a dollop of plain yogurt or sour cream ( not in calculation) and pita chips.

    I've made this twice now and love love love it! Great with rolls or toast and sour cream or yogurt (both vegan and dairy varieties work).
