Cilantro Chicken Wraps

3 boneless, skinless chicken breasts1 lime (zested and juiced)1/4 C Light Mayonnaise1 tsp salt1 tsp black ground pepper1 tsp ground cayenne pepper1/2 C finely chopped cilantro1/2 C finely chopped red onion2 garlic cloves (minced)1 -15oz can black beans (rinsed and drained)1 -15oz can white corn (rinsed and drained)8 fat free soft tacos
Makes 8 wraps (268.7 cal. each)
First prepare chicken breast marinade.
Combine lime zest and 1/2 lime juice, 1 TBS cilantro, and 1 TBS onion. Pour over chicken and marinade overnight.
Grill chicken until cooked through. Dice and set aside to cool.
In a large bowl combine remaining lime juice, mayonnaise, salt, peppers, remaining cilantro, remaining onion, and garlic. Stir well. Toss in black beans, corn, and diced chicken. Chill for 1 hour ( You may eat it now if you like; however, it tastes great if you can let it sit a while to soak all the flavors into the chicken.)
Measure 1 C of chicken mixture onto soft taco, wrap it up and enjoy!!!
