Polenta Pancakes

Ingredients
1 C Whole Wheat Pastry Flour1 tsp Baking Powder1/4 tsp Salt1C warm corn grits, white, regular, quick, cooked with water, without salt1/2 c milk, skim4 Egg whites, Beaten1 TBS country crock light
Directions
Mix all wet ingredients first and then dry ingredients, then blend together. Batter may be a little lumpy. I mix mine all up in the mixer to get it as smooth as possible. Then I cook them in 1/3 cup increments on a cast iron griddle. These could easily be cooked on a non stick surface with a cooking spray as well for less oil. Cook on side one until it's a little bubbly on the edges then flip.
