Lentil and Almond Loaf

1 bag of uncooked lentils(the canned ones have a ton of sodium in them)2 eggs( I used large because that's what was in the fridge)3 little cans of no salt added tomato sauce1 /12 cup italian bread crumbs1/4 cup yellow cornmeal1 med onion finely diced1 tsp minced garlic1 tbsp ground thyme1 tbsp celery seed1 tbsp of black pepper2 tbsp of oregano1 1/2 tsp of sage1 tbsp paprika1 cup of ground almonds
Preheat oven to 375
Cook lentils in large pot, cock the lid or you will have a mess to clean up. They will need to cook at least 20 mins once they are boiling, reduce heat and let them simmer.
In large mixing bowl add diced onion, garlic, eggs, breadcrumbs, cornmeal, spices, almonds(I grind mine in the blender on crumb), and tomato sauce.
When lentils are fully cooked, drain, then place in separate mixing bowl and mash.
Add mashed lentils to other ingredients and mix thoroughly.
Spray large casserole dish or roast pan with nonstick spray .
Take ingredients and mold into a loaf in pan.
Bake for about 45 mins until a nice dark golden brown on top.
Serve.
Makes at least 12 1 in thick slice servings.
