Caprese Sandwich

Ingredients
2 Slices Whole-Wheat Bread3 Tbs Fresh Basil Leaves (Rolled and Sliced into Ribbons)1 Oz Mozzarella Cheese (Part Skim), sliced thinly4 Slices TomatoBlack Pepper to tasteTiny bit of cooking spray
Directions
Layer the basil, cheese, tomato, on one slice of bread. Sprinkle with the pepper. Top with the remaining slice. Spray lightly with cooking spray. Fry in a skillet, or broil. Turn to brown both sides. When Cheese starts to melt, you're done!

** Tip** to keep the sandwich together while cooking, I suggest securing it with a couple tooth pics.
