Chicken and spinach Couscous

Ingredients
3 Tbsp Olive oilSalt, pepper, cumin, to taste1 onion chopped 3 gloves of garlic -chopped2 roma tomatos -chopped1 cup spinach -chopped2 2/3 cups chicken broth or stock5 Skinless chicken thighs Near East Couscous 2 boxes
Directions
Heat Olive oil and saute onions, garlic, & chicken thighs. 5 minutes Add seasonings, to taste
Add chicken Broth cover and simmer 5 Minutes
Stir in tomatos cover simmer 10 minutes Stir in spinach cover & simmer 5 minutes more.Remove chicken. Stir in couscous cover & remove from heat let sit 5 minutes then fluff with fork
