Ingredients
2 roma tomatoes2 avacados1 can black beans (or black eyed peas)1 can white shoepeg corn1/2 cup purple onion, chopped1/2 cup cilantro fresh cilantro, chopped3 tbsp olive oil3+ tbsp red wine vinegar2 cloves garlic
Directions
1. Chop tomatoes, onion, cilantro and mix together
2. Add beans and corn - both drained
3. Stir in olive oil and red wine vinegar
4. Add minced garlic
5. Cut up the avacados and stir them in gently

Refrigerate and serve - it usually tastes best after being in the fridge for awhile. Serve with lime or some type of tortilla chip.
