chicken stir fry

Ingredients
10 boneless skinless chicken thighs 2 tbs. extra light olive oil 2 tsp. crushed garlic3 c. chopped onion1/2 stp. salt 1/2 tsp. pepper1 tbsp. sambal olek10 boneless skinless chicken thighs (baked ahead of time) juice from 3 key limes2 c. shredded carrots1 bag of frozen green beans thawedi small head of cabbage (choped)3 tomatoes (sliced)add any other spices you might like and some soycooked brown rice
Directions
bake skinless chicken in oven with what ever spicies you want. we use lemon pepper at 425 degrees for 50 min.. chop up all the fresh veggies while chicken cooks. then cut up chicken when cool enouph to touch.

heat up olive oil in large fry pan or wok. add first 6 ingreidients and any other spices you might like to hot oil and stir together. cook for 2 to 3 min. siring occasonally.then add lime juice. cook for 1 min., then stir in cooked chicken and cook for 5 min.. then stir in shredded carrots and cook for2 min.. then stir in defrosted green beans and cook untill all the veggis are soft. then stir in cabbage and then stir in tomatos.

place on top of a bed of brown rice if want to
