Jiffy Corn Muffin Mix - 2 boxesJimmy Dean Premium Pork Light Sausage 12 oz rollJenni-O Lean Ground Turkey Breast - 2 lbs.Kraft Minute Brown Rice 1 family size boiling bagGarlic 2 tsp mincedRotel Original Diced Tomatoes w/Chiles 1 canHunt's Petite Diced Tomatoes in Sauce 1 canGreen Bell Pepper 1 whole pepper choppedGreen Giant canned mushrooms and pieces 1 small canOlive Oil 2 tbs.
Warm olive oil in stock pot.
Prepare corn muffin mix as instructed on box.
Saute chopped bell pepper and garlic in olive oil approximately 3 minutes.
Add in ground turkey and sausage and cook til browned.
Add all remaining ingredients except for corn muffin mix.
Spray round cake pan or square casserole with cooking spray.
Pour half of the corn muffin mixture into baking pan/dish.
Put a layer of stuffed bell pepper mixture on top of corn muffix mix in pan.
Pour remaining corn muffin mixture on top of bell pepper mixture in baking pan/dish.
Bake according to directions on corn muffin mix box.
Makes 8 1-slice servings
